Shiitake mushrooms look like umbrellas, 4-10 cm in diameter, light brown, when ripe they turn brown. On the mushroom face there are small white scales. White fungus, cylindrical stems. Fungus grows on plants with large leaves and leaves every season such as chestnut, oak, maple. This species grows wild in Vietnam, China, Japan and Korea. In the United States, farmers grow mushrooms on farms. Each log can give parasitic mushrooms 3-7 years.

Shiitake mushrooms contain a lot of protein and are especially rich in minerals, vitamins, such as vitamin C, B, precursor vitamin D, calcium, Niacin, aluminum, iron, magnesium ... It has about 30 enzymes and all the dark amino acids. Required for the body (ie, the amino acids that the body does not synthesize). Fungi also have some organic alcools that when cooked, these alcohols change, forming its distinctive aroma. Because Shiitake contains many essential substances for the body, vegetarians should use regular mushrooms This.

3. How to grow mushrooms
People use large trunks of about 15 to 25 cm (diameter). Especially the oak trees are very suitable for this fungus. Use fresh, clean trunk to avoid other wild mushrooms.

Sow mushroom seeds
Hole: Drill, drill holes in the trunk of about 5 cm deep, a distance of 10 to 15 cm. The diameter of the bore can range from 10 to 20 mm. Then they put mushrooms in it and get the adhesive tape to prevent the germs from drying out. After the germination of the roots can remove the adhesive tape.
Seeding into the cutting line: The cutting line is cut into the middle of the tree at a distance of 15 cm. The width of the cut is about 10 mm. The plants are placed in place and the line is also sealed with tape. Once you have planted the mushrooms, you can plant them in cool places in the garden. But the convenient place is the shady places like under the shade trees and especially moist with no wind blew.
Growing mushrooms:
The stem should be buried to the ground about 30 cm to be able to absorb water to avoid drying. During hot dry periods, a plastic bag should be used to avoid dehydration. If it is too dry, it can be irrigated so that the roots do not die. Harvest time can be extended to 5-6 years depending on the hardness of the tree. The total number of harvested mushrooms from 20 to 30% of the weight of fresh timber.

4. The use of mushrooms
- Scientists have extracted lentinan and Lentinula Edodes mycelium (LEM) from Chinese herbs. These are two main ingredients that make up the pharmacological effect of this fungus. A study in Japan showed that cancer patients receiving chemotherapy with Lentinan had higher chemotherapy efficacy, improved survival, and progression of cancer. So in Japan, Lentinan has been accepted as an ancillary therapy in the process of chemotherapy.

Lentinan has been shown to stimulate cells of the immune system (such as peripheral blood lymphocytes) to increase resistance. It also stimulates "killer cells naturally" in the body to attack cancer cells.

- Shiitake mushrooms contain Eritadenin, which lowers cholesterol by increasing cholesterol degradation in the liver. The fungus also reduces the cholesterol-boosting effect of fat and lowers blood pressure.

- Japanese scientists have also conducted studies on the antiviral activity of Chinese herbs. As a consequence, LEM in this plant produces antibodies to the hepatitis B virus. Of the 40 patients with chronic hepatitis B who had received LEM 6 g / day for 4 months, all had decreased inflammatory symptoms. liver disease, 15 people are completely free of B virus. LEM also slows the progression of liver cancer, protects liver cells.

Lentinan alone has no effect on HIV, but in combination with AZT, the antiviral effect is 24 times higher than AZT alone.

- Lentinan is also capable of helping people with tuberculosis to fight TB toxins. If Lentinan 1 g / day, twice a week the rate of opsonin in the blood is very high, can completely prevent the toxin of TB bacteria in the body.

In China, mushrooms have been used for a long time to cure some diseases such as urinary retention, edema, poisoning from other fungi (use 90 grams of dried mushrooms to eat). Children with measles and smallpox can consume 6 grams of dried mushrooms and eat twice a day.

- Chinese mushrooms are also used as food and medicine is very popular in Japan. According to the Traditional medicine of this country, it has antioxidant effect, help fight cell aging, increase strength, reduce fatigue in people working too stress. The best dosage is 6-16 g dry mushrooms or 90 g fresh mushrooms. Shiitake herbal dry or fresh are effective in regulating blood, strengthening the immune system, digestive help. - In herbal medicine, herbs are known as tonic. , is the "medicinal" against aging and longevity. - According to traditional medicine, sweet herbal mushrooms, calculating the use of syrup, gas, blood, blood, sputum the immune system of the body, inhibit cancer cells, lower blood pressure, reduce cholesterol, prevent kidney stones and urinary stones, help digestion ... - Shiitake mushrooms are considered food for the People with iron deficiency anemia, hypertension, diabetes, dyslipidemia, malnourished children .... Warm water about 50oC, for mushrooms to soak in. + Soak brine after the root clean to remove the usual mold or fungus smell. + Drop the dried mushrooms in the first to let the fungus sweeten out and absorb the other taste.
